Caviar is salt-cured fish roe from sturgeon, a family of fish known scientifically as Acipenseridae. The individual eggs are separated from the ovary, cleaned, graded and lightly salted. Authentic caviar may come from species such as Beluga, Ossetra, Siberian, White, Hackleback or Kaluga sturgeon and recognized sturgeon hybrids.
